Luciano insisted that he taste his latest “experiment”, and Marcello was won over at once. The encounter grew into a shared project: new spirits in the Italian tradition, with a strong personality and international ambition.

EVO FUMO embodies the project’s most distinctive idea: the grape pomace is carefully smoked before distillation. This is combined with ageing in casks made from native woods and “playing” with woods previously used to age other products. The result is a deliberately small range whose products differ clearly from one another and from other spirits on the market.

Designation: Grappa Riserva

Special feature: made from smoked pomace

Alcohol: 42 % vol.

Volume: 0.5 l, in a wooden presentation case

Distillation: discontinuous, in a bain-marie and with steam

Grape varieties: blend of Cabernet Sauvignon, Glera and Incrocio Manzoni

Ageing: in barriques of native cherry wood, with a small proportion of oak

Ageing time: almost four years

Colour: intense brown with amber highlights
